Defialy is the natural / low-intervention wine project of Micah Hewitt, based in the Macedon Ranges (Victoria, Australia), with fruit also sourced from like-minded growers around Central Victoria. The name “Defialy” comes from Micah’s childhood: it stands for “Don’t Ever Forget I’ll Always Love You” — a phrase his parents used when signing letters to him and his sister.
What sets Defialy apart is their philosophy: sustainable / regenerative viticulture (or organic principles at least), wild fermentations, minimal cellar interventions (often unfiltered, unfined, no additions), letting site and vintage do the talking. They experiment a lot — in grape varieties, wine styles, blending, maceration time, etc. And their labels and wine names often carry personality, playfulness, or story (“The Orange Rose of the Pyrenees”, “Pretty Much Red”, etc.).
As for style, expect vibrancy, texture, sometimes skin-contact or maceration, freshness, and wines that feel alive rather than heavily polished. Their wines are often chillable and approachable, with enough complexity to make them interesting.
