Moscato Giallo and Bianco
The name “Due M” stands for the two Moscato grapes that go into it and the two different fermentations they undergo: half of the fruit is treated with carbonic maceration, giving a juicy, lifted character, while the other half is destemmed and left to ferment on its skins, adding texture and depth. Afterward, the wine rests for almost two years in old oak barrels, gaining layers of complexity without being weighed down by wood. In the glass, it shines with aromas of apricot, peach, and citrus peel, laced with wild herbs, flowers, and a touch of spice. On the palate it’s bold yet balanced—ripe fruit wrapped in gentle tannins, with a refreshing mineral backbone from the volcanic soils around Lake Bolsena. The finish lingers with a hint of zesty bitterness, making it both vibrant and thought-provoking.
