Le Mazel Paulou 2023

Cinsault named for Gérald & Jocelyne’s father — Paulou — and a new voice in their lineup. Made from young Cinsault vines with a bit of carbonic maceration (whole-bunch ferment), this red carries nervous energy and a vivid fruit profile.

What makes it special: Paulou walks the line between light and expressive, with tart raspberry and softer plum fruit dancing off a touch of dusty spice.
Tasting mood: red fruit, gentle herbs, a mineral thread from limestone soils and a fresh, nervy finish.
