Poulsard
This wine comes from Alice Bouvot’s friends’ vineyards in Arbois. Grapes are picked by hand, fermented with native yeasts using a mix of whole bunches and destemmed fruit, skin-contact for ~10 days, then pressed and rested for nearly a year.
What you get is the vibrant, light-footed side of Poulsard: blood orange, red fruits, earth, and a touch of spice. It’s juicy and refreshing but balanced enough not to feel simple — there’s a subtle structure and a rustic edge that gives it character.
It’s ideal for slower sipping or pairing with lighter meats, charcuterie, or dishes with mild herbs. If you chill it slightly, it opens up beautifully and delivers that kind of red-wine summer skin contact feel.
