Chardonnay
Made with rarity vines in Hautes-Côtes de Nuits under the Abbey of Saint-Vivant produce tiny yields, organically farmed, wild-yeast fermented, and handled with minimal intervention. After harvest it ages ~24 months in used oak barrels (some new wood in some batches), never filtered, and without added sulphur. What you experience in the glass is vivid minerality and freshness, not a heavy oak Chardonnay but one with depth and character. Aromas of citrus peel, white orchard fruit, gentle waxy texture, maybe a touch of stone or wet rock. The mouth is balanced, powerful yet nuanced — acidity that lifts the wine, subtle complexity, lingering finish. It’s a Chardonnay for people who want more than comfort wine, something expressive, textured, and alive.
