Momento Mori is a boutique natural wine project run by Dane and Hannah Johns in Gippsland, Victoria, Australia. Though they currently source much of their fruit from growers who adhere to organic methods, they also farm small plots themselves near their home.
Their philosophy is clear: “Organic farming, no-tech, fine natural wines.” They make small batch ferments using wild yeast, avoid oak (especially new oak), and steer clear of winemaking additions. Many cuvées are made with no fining, no filtration, and in some cases without sulphur additions at any stage.
Dane’s background is interesting and relevant: before becoming a vigneron, he worked for many years as a barista and coffee roaster in Melbourne. That intense training of the palate (working with aromas, blending, precision) is something he often references as influencing how he approaches wine.
His first vintage under Momento Mori was around 2013. Over time, he’s built a reputation for wines that feel alive, idiosyncratic, aromatic, and pure — with focus on Italian and Mediterranean varieties that thrive in Victoria (e.g. Vermentino, Moscato Giallo, Fiano) as well as small reds.
Momento Mori is not trying to overpower you. It’s trying to invite you in, with wines that are delicate, expressive, and filled with life.
