Vinified in an amphora (a 500-litre terracotta vessel) from start to finish. The grapes are fully destemmed, then given a two-week skin maceration, before pressing and letting the wine rest in amphora for about a year, then a few months in bottle.
It’s an orange/skin-contact white in amphora, so it’s pushing boundaries. It lets you taste more than just fruit — you taste soil, texture, time. And that earthy-mineral edge gives it backbone. It’s not a “light summer white” — it’s a wine to explore, to pair with food that has flavour and richness, or to sip slowly. It has strength and texture — there are tannins (unusual for many whites) that frame things without being harsh, acidity to keep it fresh, and mineral and smoky undertones balancing fruit and depth. The finish tends toward citrus and fresh mineral notes, with enough structure to mark it as something worth pausing over.
